28 days on Himalayan salt
Our beef spends 28 days ageing against Himalayan salt. The salt draws moisture slowly out of the cut, concentrates the flavour and firms the texture, so the steak that reaches your table tastes of beef rather than of water.
We only age the premium cuts. If a cut is not good enough to hang for a month, it does not go on the menu.
A bespoke charcoal grill
Everything is cooked over live charcoal on a grill built for this kitchen. Charcoal runs far hotter than a gas flat-top, so the crust forms in seconds and the centre stays exactly where you asked for it.
The smoke is part of the seasoning. It is why a steak here does not taste like a steak cooked in a pan at home.
A5 grade Wagyu
We hold special cuts of A5 grade Wagyu — the highest grade awarded in Japan, marbled so finely that the fat renders at body temperature. It is served in smaller portions because it is very rich, and it sells out.
A room of your own
Our private dining room sits apart from the main floor — one long oval table under a chandelier, gold textured walls and a slatted timber ceiling. It suits birthdays, anniversaries, business dinners and Christmas, and it is the quietest place in the building to hold a conversation over a good steak.
